Artichoke & Spinach dip

The perfect plate alongside crusty bread and a glass of Kaapzicht Chenin Blanc

Yesterday was so much fun. I presented a sourdough workshop with 15 lovely ladies. The day before the workshop I couldn't come up with any ideas to serve alongside the crusty chewy bread. A beautiful memory popped into my head and I went straight back to that Sunday when my girlfriend Julia Benadie whipped out a plate of artichoke & spinach dip that she served with bread (It was such a good memory sitting around that table under the blooming Jacaranda) and I knew exactly what to serve for my guests. The ladies couldn't get enough and we literally polished the plate. I've been getting text message today asking me for the recipe - So here goes.

SERVES 4

INGREDIENTS

1 cup artichoke (I buy mine at Super Sconto)
1 cup fresh spinach (chopped)
3 cloves fresh garlic (crushed)
1 small red onion (chopped)
1 cup sour cream
1 cup cream cheese
1 cup mozzarella (grated)
4 tablespoons milk
1 tablespoon origanum
salt & pepper
and a splash of Banhoek chillie oil

METHOD

Preheat the oven at 200 Degrees Celcius
Combine all the ingredients and transfer onto a flat pie dish
Sprinkle with extra mozzarella and bake for +- 30 minutes until bubbling and golden. Serve with crusty bread and a glass of Kaapzicht Chenin Blanc
